I’ve been having a ton of fun hosting gym sessions in my home gym and going to yoga…at the same time we’re wiggling into our schedule of having the kids in school this past month and a half. If there’s a time I need to up my food game, it’s now. Honestly, there’s been some peanut butter and jelly nights as we’re just getting some something into our bellies. I need quick things to make, something filling, something that’s going to fuel me to get to the next soccer practice and workout and helping with homework. This was my lunch. I loved its ease and flavor combo. Up it with jalapeños if you want. Either way, enjoy your food and maybe use Trader Joe’s Double Roasted Salsa…my favorite right now.
